A tomato based Filipino dish featuring prime beef brisket larded with ribbons of fat for ultimate tenderness. The beef is simmered in a rich, tangy reduction of ripe tomatoes, calamansi, and aged soy, infused with the sweetness of bell peppers and caramelized onions.
Cast Iron Mixed Seafood
A coastal bounty of tiger prawns, succulent squid, and seasonal white fish simmered in a deeply aromatic, kimchi infused seafood reduction. Presented in a heated cast-iron bowl to preserve the complexity of the broth.
